How to Cook a Raccoon is built by undergraduate students—from the images and the recipe videos to the research papers and the webpage itself—and showcases undergraduate archival research in local historic recipe collections. This web archive provides access to the final collaborative projects of the Honors seminar “How to Cook a Raccoon: The Memory Work of Recipe Collections” taught in the English Department at Kansas State University during the fall semester 2018. The seven students (five seniors and two juniors) enrolled in the seminar—Brendan Clary, Dene Dryden, Megan Eppler, Joyce Friedel, Kyle Hempel, Michael McCosh, and Noor Mustafa—met twice each week for seminar discussion with regular visits to the Riley Historical Society and the Manhattan Public Library. In fact, most of the seven cookbooks explored and described in How to Cook Raccoon are housed in the Riley Historical Society.
